🍽️ Fresh Quark with Cress

Ingredients
- 1 box garden cress
- 2 small shallots
- 6 radishes
- 300 g quark
- 50 g crème fraîche
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
- edible flowers (for garnish, e.g. pansies
Instructions
- 1. Cut the cress off using kitchen scissors.
- 2. Rinse the cut cress under cold water in a sieve.
- 3. Gently pat the cress dry with a kitchen towel.
- 4. Peel the shallots and remove the outer skin.
- 5. Finely chop the shallots.
- 6. Wash the radishes thoroughly under running water.
- 7. Remove the green stems and root ends of the radishes.
- 8. Cut the radishes into small, even cubes.
- 9. Add the quark, crème fraîche, and lemon juice to a bowl.
- 10. Stir the ingredients until smooth with a spoon or fork.
- 11. Season the quark mixture with salt and black pepper to taste.
- 12. Fold the diced radishes into the quark mixture.
- 13. Take half of the prepared cress and mix it in.
- 14. Fill the cress quark into small bowls or glasses.
- 15. Garnish the surface with the remaining cress.
- 16. Sprinkle some edible flowers on top as decoration.
- 17. Serve the dish fresh with crusty peasant bread.
