  1. 1. Peel the carrot and trim the ends.
  2. 2. Cut the carrot into very small cubes.
  3. 3. Bring salted water to a boil.
  4. 4. Add the carrot cubes to the boiling water for 1 minute (this is called blanching).
  5. 5. Drain the carrots and rinse them with cold water to stop the cooking process.
  6. 6. Let the carrots drain well.
  7. 7. Wash the radishes and remove the stems.
  8. 8. Cut the radishes into very small cubes as well.
  9. 9. Rinse the chives and shake them dry.
  10. 10. Cut the chives into fine rings.
  11. 11. Mix the quark with the crème fraîche and the yogurt in a bowl.
  12. 12. Fold in the prepared carrots and radishes into the quark mixture.
  13. 13. Stir in the chopped chives.
  14. 14. Season the mixture with salt and pepper to taste.
  15. 15. Fill the dip into glasses and serve.
