🍽️ Fresh Quark Lime Cream

Ingredients
- 2 unpeeled limes
- 100 ml coconut water
- 80 g sugar
- 200 g yogurt
- 250 g quark
- 250 ml coconut cream (well chilled)
Instructions
- 1. Wash the limes thoroughly with hot water and dry them.
- 2. Grate the peel of the first lime finely to obtain zest.
- 3. Grate the peel of the second lime finely as well.
- 4. Squeeze the juice out of both limes.
- 5. Add the lime zest, lime juice, coconut water, and sugar to a pot.
- 6. Bring the mixture to a boil.
- 7. Let the mixture simmer for about 5 minutes until the sugar is completely dissolved.
- 8. Remove 4 tablespoons of the hot syrup mixture and set it aside.
- 9. Add the lime zest to the removed 4 tablespoons of syrup and set it aside as well.
- 10. Let the remaining liquid in the pot cool down.
- 11. Stir the yogurt and quark smoothly into the cooled liquid.
- 12. Whip the coconut cream until creamy.
- 13. Gently fold the whipped coconut cream into the quark mixture.
- 14. Distribute the cream onto glasses or small bowls.
- 15. Place the cream in the refrigerator for at least 1 hour.
- 16. Drizzle the finished cream with the reserved lime-coconut syrup before serving.
