  1. 1. Wash the sour cherries and remove the pits. Slice the vanilla pod lengthwise and scrape out the seeds. Let the quark drain well.
  2. 2. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks and coconut blossom sugar with a hand mixer until creamy. Stir in the vanilla seeds, quark, and semolina. Gently fold in the egg whites and mix in the cherries.
  3. 3. Pour the mixture into a greased springform pan and sprinkle with almonds. Bake the cake in a preheated oven at 160 °C (convection 140 °C; gas mark 2) for 65 minutes. Cover the cake if it browns too quickly. Serve dusted with erythritol powdered sugar.
