🍽️ Quark Semolina Dumplings with Poppy Seed Sauce

Ingredients
- 250 g Low-fat curd cheese
- 30 g Butter
- 2 tbsp Sugar
- 1 packet Vanilla sugar
- 1 pinch Iodized salt
- 1 Egg
- Lemon zest
- 80 g Semolina
- 1 tbsp Breadcrumbs
- 200 ml Orange juice
- 50 g Butter
- 125 g Poppy seed cake
Instructions
- 1. Place the quark in a sieve and let it drain for one hour.
- 2. Whisk the soft butter, sugar, vanilla sugar, salt, and egg with a whisk until the mixture becomes frothy.
- 3. Fold in the drained quark, lemon zest, semolina, and breadcrumbs into the butter mixture.
- 4. Let the dough rest covered for 30 minutes.
- 5. Bring water with salt to a boil in a large pot.
- 6. Dip a tablespoon into the hot water to wet it.
- 7. Scoop small portions of the quark mixture with the wet spoon.
- 8. Smooth the surface of the portion with a second, also wet tablespoon.
- 9. Gently drop the formed balls into the boiling salted water.
- 10. Release the balls from the first spoon using the second spoon.
- 11. Repeat this process until all the quark mixture is used up.
- 12. Turn off the heat and let the dumplings rest in the open pot for about 12 minutes to finish cooking.
- 13. Remove the dumplings with a slotted spoon and let them drain.
- 14. Mix orange juice, butter, and poppy seed cake crumbs in a pan.
- 15. Bring the mixture to a boil once.
- 16. Pour the warm poppy seed butter over the finished quark balls.
