  2. 2. Remove any stems or hard seeds.
  3. 3. Cut the strawberries in half.
  4. 4. Melt the butter in a small pot.
  5. 5. Let the melted butter cool down briefly.
  6. 6. Rinse the lemon under hot water.
  7. 7. Dry the lemon with a cloth.
  8. 8. Grate fine zest from one teaspoon of lemon.
  9. 9. Separate the egg into yolk and white.
  10. 10. Mix the quark with the egg yolk.
  11. 11. Add the melted butter to the quark mixture.
  12. 12. Add the lemon zest.
  13. 13. Add one tablespoon of raw cane sugar.
  14. 14. Stir in one tablespoon of cornstarch.
  15. 15. Whip the egg white with a pinch of salt until stiff.
  16. 16. Let the remaining sugar trickle in slowly.
  17. 17. Whip the mixture into a stiff snow.
  18. 18. Gently fold the egg white snow into the quark mixture.
  19. 19. Place the quark cream onto two deep plates.
  20. 20. Smooth the surface of the quark cream.
  21. 21. Distribute the prepared berries over the quark mixture.
  22. 22. Place the plates on a baking sheet.
  23. 23. Preheat the oven grill.
  24. 24. Place the tray on the lowest rack.
  25. 25. Gratin for 4 to 5 minutes.
  26. 26. Remove it when it is golden brown.
  27. 27. Serve the dish immediately.
