🍰 Crispy Quark and Lemon Gratin with Berries

Ingredients
- 300 g mixed berries (e.g. strawberries, raspberries, blackberries)
- 20 g butter
- 1 lemon
- 1 egg
- 100 g low-fat quark
- 2 tbsp raw cane sugar
- 1 tsp cornstarch
- salt
Instructions
- 1. Gently rinse the berries under cold water.
- 2. Remove any stems or hard seeds.
- 3. Cut the strawberries in half.
- 4. Melt the butter in a small pot.
- 5. Let the melted butter cool down briefly.
- 6. Rinse the lemon under hot water.
- 7. Dry the lemon with a cloth.
- 8. Grate fine zest from one teaspoon of lemon.
- 9. Separate the egg into yolk and white.
- 10. Mix the quark with the egg yolk.
- 11. Add the melted butter to the quark mixture.
- 12. Add the lemon zest.
- 13. Add one tablespoon of raw cane sugar.
- 14. Stir in one tablespoon of cornstarch.
- 15. Whip the egg white with a pinch of salt until stiff.
- 16. Let the remaining sugar trickle in slowly.
- 17. Whip the mixture into a stiff snow.
- 18. Gently fold the egg white snow into the quark mixture.
- 19. Place the quark cream onto two deep plates.
- 20. Smooth the surface of the quark cream.
- 21. Distribute the prepared berries over the quark mixture.
- 22. Place the plates on a baking sheet.
- 23. Preheat the oven grill.
- 24. Place the tray on the lowest rack.
- 25. Gratin for 4 to 5 minutes.
- 26. Remove it when it is golden brown.
- 27. Serve the dish immediately.
