🍰 Fruity Quark Strawberry Cream

Ingredients
- 500 g strawberries
- 2 egg yolks
- 3 tbsp sugar
- 250 g quark
- 100 ml whipping cream
- 5 sheets gelatin
- chopped mint (for garnish)
Instructions
- 1. Place the gelatin leaves in a bowl of cold water.
- 2. Wash the strawberries thoroughly.
- 3. Remove the green stems from the berries.
- 4. Cut the larger strawberries into halves or quarters.
- 5. Take 300 grams of the prepared strawberries.
- 6. Puree these 300 grams into a smooth mash.
- 7. Whisk the egg yolks together with the sugar until creamy.
- 8. Bring the strawberry puree to a boil once.
- 9. Remove the puree from the heat.
- 10. Squeeze the soaked gelatin well.
- 11. Stir the squeezed gelatin into the warm puree.
- 12. Slowly mix the gelatin-puree mixture with the egg yolks.
- 13. Stir constantly to ensure everything combines well.
- 14. Gently fold the quark into the mixture.
- 15. Let the cream cool down now.
- 16. Taste and add more sugar if needed.
- 17. Whip the cream until firm.
- 18. Wait until the quark mixture starts to thicken slightly.
- 19. Fold the whipped cream into the cooled quark mixture.
- 20. Fill the finished cream into a serving bowl.
- 21. Place the bowl in the refrigerator for at least 3 hours.
- 22. Take the cream out of the fridge shortly before serving.
- 23. Scoop out pretty quenelles (oval shaped portions) from the cream using a spoon.
- 24. Garnish the cream with the remaining fresh strawberries.
- 25. Decorate the dish additionally with fresh mint.
