  1. 1. Place the gelatin leaves in a bowl of cold water.
  2. 2. Wash the strawberries thoroughly.
  3. 3. Remove the green stems from the berries.
  4. 4. Cut the larger strawberries into halves or quarters.
  5. 5. Take 300 grams of the prepared strawberries.
  6. 6. Puree these 300 grams into a smooth mash.
  7. 7. Whisk the egg yolks together with the sugar until creamy.
  8. 8. Bring the strawberry puree to a boil once.
  9. 9. Remove the puree from the heat.
  10. 10. Squeeze the soaked gelatin well.
  11. 11. Stir the squeezed gelatin into the warm puree.
  12. 12. Slowly mix the gelatin-puree mixture with the egg yolks.
  13. 13. Stir constantly to ensure everything combines well.
  14. 14. Gently fold the quark into the mixture.
  15. 15. Let the cream cool down now.
  16. 16. Taste and add more sugar if needed.
  17. 17. Whip the cream until firm.
  18. 18. Wait until the quark mixture starts to thicken slightly.
  19. 19. Fold the whipped cream into the cooled quark mixture.
  20. 20. Fill the finished cream into a serving bowl.
  21. 21. Place the bowl in the refrigerator for at least 3 hours.
  22. 22. Take the cream out of the fridge shortly before serving.
  23. 23. Scoop out pretty quenelles (oval shaped portions) from the cream using a spoon.
  24. 24. Garnish the cream with the remaining fresh strawberries.
  25. 25. Decorate the dish additionally with fresh mint.
