🍽️ Turkey Strips with Snow Peas and Peas

Ingredients
- 80 g peanut butter
- 100 ml coconut milk
- salt
- cayenne pepper
- 400 g snow peas
- 400 g peas
- 2 spring onions
- 500 g turkey breast fillet
- 1 clove garlic
- 2 tbsp olive oil
- 1 tsp harissa (spice mix)
Instructions
- 1. Heat the peanut butter together with the coconut milk in a pot.
- 2. Let the mixture simmer until it becomes creamy.
- 3. Season the sauce with salt and cayenne pepper.
- 4. Thoroughly wash the snow peas and the peas.
- 5. Blanch the snow peas and peas in boiling salted water for 3 to 4 minutes.
- 6. Immediately shock the vegetables with cold water to stop the cooking process.
- 7. Let the vegetables drain well.
- 8. Wash the spring onions and remove the dry ends.
- 9. Cut the spring onions into thin strips.
- 10. Rinse the turkey meat and pat it dry with a kitchen towel.
- 11. Cut the meat into thin strips.
- 12. Peel the garlic and chop it finely.
- 13. Rub the chopped garlic with a pinch of salt to form a fine paste.
- 14. Mix the garlic paste with the oil and harissa.
- 15. Mix the marinade evenly with the turkey strips.
- 16. Heat a non-stick pan over high heat.
- 17. Fry the turkey strips, stirring constantly, for 2 to 3 minutes until golden brown.
- 18. Add the snow peas, peas, and spring onions to the pan.
- 19. Finish cooking the vegetables together with the meat for 1 to 2 minutes.
- 20. Drizzle the peanut sauce over the finished dish.
- 21. Sprinkle the dish with some harissa and serve.
