🍽️ Turkey Skewers on Spinach Rice

Ingredients
- 250 g turkey breast fillet
- 2 red onions
- salt
- pepper
- 600 g fresh leaf spinach
- 100 g basmati rice
- 2 tbsp olive oil
- 50 g whole peeled almond kernels
- nutmeg
- 50 g raisins
Instructions
- 1. Rinse the turkey meat under cold water.
- 2. Pat the meat dry with kitchen paper.
- 3. Cut the turkey meat into small cubes.
- 4. Peel the onions.
- 5. Quarter the onions.
- 6. Thread the meat cubes and onion pieces alternately onto four wooden skewers.
- 7. Season the skewers with salt and pepper.
- 8. Clean the spinach of tough stems.
- 9. Wash the spinach thoroughly in a colander.
- 10. Bring 200 milliliters of water to a boil.
- 11. Add some salt to the boiling water.
- 12. Add the rice to the salted water.
- 13. Cook the rice covered for about 10 minutes.
- 14. Heat oil in a non-stick pan.
- 15. Place the skewers in the hot pan.
- 16. Fry the skewers on all sides until lightly browned over medium heat.
- 17. Add the almonds to the pan.
- 18. Toast the almonds briefly on the side.
- 19. Place the wet spinach in a pot.
- 20. Let the spinach wilt over medium heat.
- 21. Season the spinach with salt and pepper.
- 22. Grate some nutmeg over the spinach.
- 23. Place the spinach in a colander.
- 24. Let the spinach drain.
- 25. Chop the spinach roughly.
- 26. Place the rice in a bowl.
- 27. Mix the chopped spinach into the rice.
- 28. Add the toasted almonds to the rice.
- 29. Add the raisins to the rice.
- 30. Serve the rice with the turkey skewers.
