🍽️ Turkey Skewers with Mango on Lentil Vegetables

Ingredients
- 100 g green lentils
- 1 l vegetable broth
- 100 g red lentils
- 1 small mango
- 500 g turkey breast fillet
- vanilla salt
- pepper
- 1 egg yolk
- 1 tsp mustard
- 150 ml soybean oil
- 1 tbsp lime juice
- 1 pinch sugar
- salt
- 2 tbsp vegetable oil (for frying)
Instructions
- 1. Pour the green lentils into the vegetable broth.
- 2. Cook the green lentils for 40 to 45 minutes.
- 3. Add the red lentils.
- 4. Continue cooking everything for another 10 to 15 minutes.
- 5. The lentils should still have a slight bite.
- 6. Drain the lentils.
- 7. Let the lentils drain slightly.
- 8. Peel the mango.
- 9. Cut the flesh away from the pit.
- 10. Cut the mango into bite-sized pieces.
- 11. Cut the turkey meat into cubes.
- 12. Season the meat with salt and pepper.
- 13. Thread the meat and mango alternately onto the skewers.
- 14. Keep the skewers cool.
- 15. Whisk the egg yolk with the mustard.
- 16. Add the oil drop by drop.
- 17. Whisk vigorously until an emulsion forms.
- 18. Add the remaining oil in a thin stream.
- 19. The emulsion should have a homogeneous consistency.
- 20. Season the sauce with salt, pepper, and lime juice.
- 21. Mix the sauce with the lentils.
- 22. Heat oil in a pan.
- 23. Fry the skewers in the hot oil.
- 24. Brown the skewers on all sides.
- 25. Plate the lentil salad.
- 26. Place the turkey-mango skewers on top.
