  6. 6. Drain the lentils.
  7. 7. Let the lentils drain slightly.
  8. 8. Peel the mango.
  9. 9. Cut the flesh away from the pit.
  10. 10. Cut the mango into bite-sized pieces.
  11. 11. Cut the turkey meat into cubes.
  12. 12. Season the meat with salt and pepper.
  13. 13. Thread the meat and mango alternately onto the skewers.
  14. 14. Keep the skewers cool.
  15. 15. Whisk the egg yolk with the mustard.
