  1. 1. Pound the turkey cutlets flat with a meat mallet if they are still too thick.
  2. 2. Season the cutlets on both sides with salt and pepper.
  3. 3. Mix the sour cream, mustard, egg yolk, salt, pepper, and Parmesan in a bowl until smooth.
  4. 4. Wash the wild garlic thoroughly and shake it dry.
  5. 5. Take about two-thirds of the wild garlic leaves and chop them finely.
  6. 6. Set aside the remaining wild garlic leaves to keep them whole.
  7. 7. Stir the finely chopped wild garlic into the sour cream and cheese mixture.
  8. 8. Spread the filling evenly over each turkey cutlet.
  9. 9. Place the whole wild garlic leaves on top of the filling.
  10. 10. Fold the cutlets in half so that the filling is enclosed.
  11. 11. Secure the cutlets with toothpicks so they do not open up.
  12. 12. Heat oil in a frying pan until it is hot.
  13. 13. Fry the cutlets on both sides for about five minutes until they are crispy and brown.
