🍽️ Crispy Turkey Cutlets with Wild Garlic Filling

Ingredients
- 8 thin turkey schnitzels (approx. 80 g each)
- 200 g sour cream
- 1 tbsp hot mustard
- 1 egg yolk
- salt
- pepper (from the mill)
- 4 tbsp freshly grated parmesan
- 2 handfuls wild garlic
- vegetable oil (for frying)
Instructions
- 1. Pound the turkey cutlets flat with a meat mallet if they are still too thick.
- 2. Season the cutlets on both sides with salt and pepper.
- 3. Mix the sour cream, mustard, egg yolk, salt, pepper, and Parmesan in a bowl until smooth.
- 4. Wash the wild garlic thoroughly and shake it dry.
- 5. Take about two-thirds of the wild garlic leaves and chop them finely.
- 6. Set aside the remaining wild garlic leaves to keep them whole.
- 7. Stir the finely chopped wild garlic into the sour cream and cheese mixture.
- 8. Spread the filling evenly over each turkey cutlet.
- 9. Place the whole wild garlic leaves on top of the filling.
- 10. Fold the cutlets in half so that the filling is enclosed.
- 11. Secure the cutlets with toothpicks so they do not open up.
- 12. Heat oil in a frying pan until it is hot.
- 13. Fry the cutlets on both sides for about five minutes until they are crispy and brown.
