🍽️ Chicken Gyros with Cabbage Salad

Ingredients
- 750 g turkey breast fillet
- 50 ml olive oil
- 1 tbsp thyme
- 1 tbsp oregano
- 4 garlic cloves
- 0.5 lemon
- salt
- pepper
- 3 tbsp oil or ghee
- 1 kg white cabbage
- 6 tbsp vinegar
- 80 ml sunflower oil
- salt
- pepper
- 3 tomatoes
- 2 green chili peppers
Instructions
- 1. Squeeze the lemon. Add the oil, lemon juice, thyme, oregano, a pinch of salt, and pepper to a bowl.
- 2. Peel the garlic and press it into the marinade. Stir everything well and let the mixture rest for a moment.
- 3. Wash the meat and pat it dry. Cut it into thin strips, cutting against the grain.
- 4. Add the meat to the marinade and mix well. Cover the bowl and marinate the meat in the refrigerator for at least 30 minutes.
- 5. Wash the white cabbage, quarter it, and remove the hard core. Cut the cabbage into very fine strips.
- 6. Blanch the cabbage strips for 2 minutes in boiling salted water (cook briefly in boiling water).
- 7. Drain the water, shock the cabbage with cold water, and let it drain well.
- 8. Whisk vinegar, oil, salt, and pepper in a small bowl to make a dressing marinade.
- 9. Pour the marinade over the cabbage. Knead the vegetables vigorously with clean hands and let it marinate.
- 10. Blanch the tomatoes briefly with boiling water, shock them, peel them, quarter them, remove the core, and cut them into cubes. Wash the chili pepper, cut it lengthwise, remove seeds and white inner membranes, and cut into thin strips. Mix both into the cabbage salad.
- 11. Place the marinated meat in a sieve and let it drain. Heat ghee (clarified butter) in a large pan.
- 12. Fry the meat in portions (3 to 4 batches) in the hot pan. Turn it frequently and fry vigorously for about 4 minutes. Remove the cooked meat and keep it warm in the preheated oven at 80 degrees Celsius.
- 13. Stir the cabbage salad well again, season to taste, and add some cumin if desired.
- 14. Plate the cabbage salad and the gyros meat. Serve with fresh white bread or rice and tzatziki.
