🍽️ Quick Turkey Stew with Peas and Apricots

Ingredients
- 400 g turkey breast fillet
- 2 tbsp oil
- salt
- pepper (from the mill)
- 125 ml poultry broth (instant)
- 250 g long-grain rice
- 2 bunch spring onions
- 1 small can apricots
- 100 g frozen peas
- 1 tbsp cornstarch
- 150 ml dry cider (apple wine)
- 1 pinch sambal oelek
- mint (for garnish)
Instructions
- 1. Cut the turkey breast into thin strips.
- 2. Heat oil in a large pan.
- 3. Sear the turkey strips on all sides over high heat.
- 4. Season the meat with salt and pepper.
- 5. Pour in the broth.
- 6. Simmer the dish under a lid for about 5 minutes.
- 7. Bring water with salt to a boil.
- 8. Cook the rice in it for 15 to 20 minutes until al dente.
- 9. Thoroughly wash the spring onions.
- 10. Cut the spring onions into small pieces.
- 11. Drain the apricots.
- 12. Cut the apricots into wedges.
- 13. Add the apricots, spring onions, and peas to the meat in the pan.
- 14. Bring the mixture to a boil.
- 15. Whisk the cornstarch with cider and Sambal Oelek in a small bowl.
- 16. Stir the starch mixture into the pan.
- 17. Let the dish boil once briefly to thicken.
- 18. Season the stew with salt and pepper to taste.
- 19. Serve the stew garnished with fresh mint on top of the rice.
