  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Remove visible fat and sinews from the meat.
  4. 4. Cut the meat into thin strips.
  5. 5. Clean the mushrooms of dirt.
  6. 6. Slice the mushrooms into thin rounds.
  7. 7. Slice the gherkins lengthwise into thin rounds.
  8. 8. Wash the parsley.
  9. 9. Shake the parsley dry.
  10. 10. Finely chop the parsley.
  11. 11. Heat 1 tablespoon of oil in a non-stick pan.
  12. 12. Sear the meat over high heat.
  13. 13. Fry the meat on all sides.
  14. 14. Remove the meat from the pan after 3 to 5 minutes.
  15. 15. Wrap the meat in aluminum foil.
  16. 16. Keep the meat warm.
  17. 17. Heat the remaining oil in the pan very strongly.
  18. 18. Fry the mushrooms over medium heat.
  19. 19. Stir the mushrooms while doing so.
  20. 20. Make sure the mushrooms do not become watery.
  21. 21. Add the gherkin slices.
  22. 22. Let the gherkins warm up.
  23. 23. Remove the pan from the heat.
  24. 24. Stir in the sour cream.
  25. 25. Season the sauce with salt.

  27. 27. Season the sauce with lemon juice.
  28. 28. Return the meat with the juices to the pan.
  29. 29. Let the dish simmer for 1 to 2 minutes.
