🍽️ Crispy Turkey Meatballs with Fresh Carrot and Apple Salad

Ingredients
- 1 bread roll (stale)
- 1 onion
- 1 tsp butter
- 500 g ground turkey
- 1 egg
- salt
- pepper
- paprika powder
- 1 tsp mustard (hot)
- 2 tbsp parsley
- 1 can corn
- fat (for frying)
- 600 g carrots
- 2 apples
- 1 orange (juiced)
- 0.5 lemon (juiced)
- 2 tbsp oil
- salt
- pepper
- sugar
- 2 tbsp hazelnut flakes
Instructions
- 1. Soak the bread roll in lukewarm water.
- 2. Drain the corn in a sieve.
- 3. Peel the onions and cut them into fine cubes.
- 4. Sauté the onion cubes in butter until translucent and set them aside.
- 5. Add the minced meat, egg, salt, pepper, mustard, and sautéed onions to a bowl.
- 6. Squeeze the soaked bread well and add it to the meat along with the corn and parsley.
- 7. Knead everything into a uniform meat dough.
- 8. Divide the dough into four equal parts.
- 9. Shape five small meatballs from each part.
- 10. Fry the meatballs in hot fat for about 2 to 3 minutes on each side.
- 11. Keep the finished meatballs warm in the oven at 100 degrees Celsius.
- 12. Peel the carrots and the apples.
- 13. Grate the carrots and the apples finely.
- 14. Mix the fruit and vegetables with lemon and orange juice.
- 15. Add oil, salt, pepper, and sugar, then adjust the seasoning.
- 16. Toast the nuts briefly in a non-stick pan without fat.
- 17. Spread the salad onto four plates.
- 18. Sprinkle the toasted nuts over the salad.
- 19. Serve five hot meatballs with each salad.
- 20. Serve the dish immediately.
