🍽️ Wok Turkey with Crispy Snow Peas

Ingredients
- 600 g turkey breast fillet
- 4 tbsp soy sauce (light)
- 3 tbsp lemon juice
- 1 cm ginger (finely chopped)
- 1 tsp oregano (dried)
- 2 tbsp oil
- 200 g snow peas
- 0.5 bunch coriander
- 1 clove garlic (chopped)
- 4 carrots
- 1 bunch spring onions
- 2 tbsp oil
- 100 ml vegetable broth
- salt
- pepper
- soy sauce
- oyster sauce
Instructions
- 1. Cut the turkey meat into small, bite-sized cubes.
- 2. Place the meat pieces into a freezer bag along with soy sauce, lemon juice, grated ginger, oregano, and oil.
- 3. Seal the bag tightly and massage the marinade into the meat by gently kneading the outside of the bag.
- 4. Let the meat marinate for at least 30 minutes.
- 5. Peel the carrots and cut them lengthwise into thin sticks.
- 6. Thoroughly wash the snow peas.
- 7. Wash the cilantro, shake off excess water, and tear the leaves into smaller pieces.
- 8. Clean the spring onions and finely chop the green tops.
- 9. Halve the white bulbs of the spring onions lengthwise and trim off the hard root end.
- 10. Heat oil in a deep frying pan or a wok.
- 11. Sauté the marinated meat in the hot oil.
- 12. Add the chopped spring onion greens and the halved onion bulbs to the meat.
- 13. Add the carrot sticks and sauté everything briefly.
- 14. Deglaze the vegetables with the broth.
- 15. Simmer the mixture over medium heat, stirring constantly, for 3 to 5 minutes.
- 16. Pour the remaining marinade over the dish.
- 17. Add the snow peas and cook, stirring, for another 1 to 2 minutes.
- 18. Season the dish finally with soy sauce, oyster sauce, salt, and pepper.
- 19. Fold in the fresh cilantro and serve the dish immediately.
