  1. 1. Cut the turkey meat into small, bite-sized cubes.
  2. 2. Place the meat pieces into a freezer bag along with soy sauce, lemon juice, grated ginger, oregano, and oil.
  3. 3. Seal the bag tightly and massage the marinade into the meat by gently kneading the outside of the bag.
  4. 4. Let the meat marinate for at least 30 minutes.
  5. 5. Peel the carrots and cut them lengthwise into thin sticks.
  6. 6. Thoroughly wash the snow peas.
  7. 7. Wash the cilantro, shake off excess water, and tear the leaves into smaller pieces.
  8. 8. Clean the spring onions and finely chop the green tops.
  9. 9. Halve the white bulbs of the spring onions lengthwise and trim off the hard root end.
  10. 10. Heat oil in a deep frying pan or a wok.
  11. 11. Sauté the marinated meat in the hot oil.
  12. 12. Add the chopped spring onion greens and the halved onion bulbs to the meat.
  13. 13. Add the carrot sticks and sauté everything briefly.
  14. 14. Deglaze the vegetables with the broth.
  15. 15. Simmer the mixture over medium heat, stirring constantly, for 3 to 5 minutes.
  16. 16. Pour the remaining marinade over the dish.
  17. 17. Add the snow peas and cook, stirring, for another 1 to 2 minutes.
  18. 18. Season the dish finally with soy sauce, oyster sauce, salt, and pepper.
  19. 19. Fold in the fresh cilantro and serve the dish immediately.
