🍽️ Tender turkey breast with creamy white asparagus

Ingredients
- 750 g Turkey breast fillet
- 4 tbsp Vegetable oil
- 1 Garlic clove
- Salt
- Pepper (freshly ground)
- Dark poultry stock
- 1.5 kg white asparagus
- 1 tsp Sugar
- 40 g Butter
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Wash the turkey meat and pat it dry with kitchen paper.
- 3. Peel the garlic clove and chop it finely.
- 4. Mix the chopped garlic with salt, pepper, and two tablespoons of oil to make a marinade.
- 5. Coat the turkey meat thoroughly with this garlic mixture.
- 6. Sear the meat on all sides in an ovenproof pan.
- 7. Place the pan in the preheated oven.
- 8. Pour about 100 milliliters of poultry stock over the meat while it cooks.
- 9. Let the turkey breast cook in the oven for about 25 minutes.
- 10. Wash the white asparagus thoroughly.
- 11. Peel the asparagus completely with a vegetable peeler.
- 12. Cut off the woody, tough ends of the asparagus stalks.
- 13. Tie the asparagus into several small bundles using kitchen twine.
- 14. Fill a large pot with water and add some sugar and salt.
- 15. Bring the water to a boil.
- 16. Add the asparagus bundles to the boiling water.
- 17. Cook the asparagus for 15 to 18 minutes until tender.
- 18. Remove the asparagus from the pot and let it drain well.
- 19. Place the asparagus stalks on the serving plates.
- 20. Distribute butter flakes evenly over the warm asparagus.
- 21. Slice the cooked turkey breast into even slices.
- 22. Drizzle the meat slices with a little remaining stock.
- 23. Arrange the turkey slices next to the asparagus on the plates.
- 24. Serve the dish immediately while hot.
