  1. 1. Preheat the oven to 180 degrees Celsius. Select the top and bottom heat setting.
  2. 2. Rinse the turkey breast under cold water. Then pat the meat completely dry with a kitchen towel.
  3. 3. Cut the turkey breast lengthwise to create a long, flat slice. Pound the meat thin with a meat mallet.
  4. 4. Peel the shallot. Dice it into small cubes.
  5. 5. Add the herbs, eggs, and cream to a bowl. Whisk the ingredients well together.
  6. 6. Season the egg mixture generously with salt and pepper.
  7. 7. Melt the butter in a hot pan. Sauté the shallot cubes until translucent.
  8. 8. Pour the egg mixture into the pan. Stir constantly until the egg is set.
  9. 9. Remove the pan from the heat. Let the egg mixture cool down slightly.
  10. 10. Place the ham slices on the flattened turkey breast.
  11. 11. Place the cooled egg mixture on the ham. Roll the turkey breast up tightly.
  12. 12. Secure the roll with kitchen twine to keep its shape.
  13. 13. Place the roll in a baking dish. Bake it in the preheated oven for 25 minutes.
  14. 14. Before serving, remove the kitchen twine. Slice the roll into thick pieces.
