🍽️ Turkey cutlets stuffed with egg

Ingredients
- 800 g turkey breast fillet
- 1 shallot
- 2 tbsp freshly chopped herbs (rosemary and sage)
- 5 eggs
- 2 tbsp whipping cream
- salt
- pepper (from the mill)
- 1 tbsp butter
- 80 g turkey ham (sliced)
- 2 tbsp vegetable oil
- 2 tbsp medium-hot mustard
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Select the top and bottom heat setting.
- 2. Rinse the turkey breast under cold water. Then pat the meat completely dry with a kitchen towel.
- 3. Cut the turkey breast lengthwise to create a long, flat slice. Pound the meat thin with a meat mallet.
- 4. Peel the shallot. Dice it into small cubes.
- 5. Add the herbs, eggs, and cream to a bowl. Whisk the ingredients well together.
- 6. Season the egg mixture generously with salt and pepper.
- 7. Melt the butter in a hot pan. Sauté the shallot cubes until translucent.
- 8. Pour the egg mixture into the pan. Stir constantly until the egg is set.
- 9. Remove the pan from the heat. Let the egg mixture cool down slightly.
- 10. Place the ham slices on the flattened turkey breast.
- 11. Place the cooled egg mixture on the ham. Roll the turkey breast up tightly.
- 12. Secure the roll with kitchen twine to keep its shape.
- 13. Place the roll in a baking dish. Bake it in the preheated oven for 25 minutes.
- 14. Before serving, remove the kitchen twine. Slice the roll into thick pieces.
