  3. 3. Fluff up the couscous with a fork.
  4. 4. Peel the onions and cut them into small cubes.
  5. 5. Slice the olives.
  6. 6. Chop the apricots finely.
  7. 7. Peel the garlic and chop it finely.
  8. 8. Finely chop a portion of the mint.
  9. 9. Mix the vinegar with coriander, salt, and pepper.
  10. 10. Stir 3 tablespoons of oil into the dressing mixture.
  11. 11. Finally, adjust the seasoning of the dressing mixture.
  12. 12. Stir the olives, apricots, garlic, mint, and half of the onion cubes into the dressing mixture.
