🥗 Grilled turkey strips on couscous salad

Ingredients
- 400 g Couscous
- 2 red onions
- 80 g black olives (pitted)
- 150 g dried apricots
- 2 garlic cloves
- 0.5 tsp coriander powder
- 6 tbsp olive oil
- 3 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 2 tbsp peanuts
- 0.5 bunch mint (use the leaves, finely chopped)
- 600 g turkey breast fillet
- 0.5 bunch mint (for garnish)
Instructions
- 1. Pour 400 milliliters of boiling salted water over the couscous.
- 2. Let the couscous swell for 5 minutes.
- 3. Fluff up the couscous with a fork.
- 4. Peel the onions and cut them into small cubes.
- 5. Slice the olives.
- 6. Chop the apricots finely.
- 7. Peel the garlic and chop it finely.
- 8. Finely chop a portion of the mint.
- 9. Mix the vinegar with coriander, salt, and pepper.
- 10. Stir 3 tablespoons of oil into the dressing mixture.
- 11. Finally, adjust the seasoning of the dressing mixture.
- 12. Stir the olives, apricots, garlic, mint, and half of the onion cubes into the dressing mixture.
- 13. Mix the entire mixture with the couscous.
- 14. Add the remaining mint and the peanuts.
- 15. Gently fold in the mint and the peanuts.
- 16. Cut the turkey breast into thin strips.
- 17. Brush the turkey strips thinly with the remaining oil.
- 18. Season the turkey strips with salt and pepper.
- 19. Grill the turkey strips on the hot grill for 1 to 2 minutes per side.
- 20. Plate the couscous salad with the grilled turkey strips.
- 21. Sprinkle the dish with the remaining onion cubes.
- 22. Garnish the dish with mint leaves.
- 23. Serve the dish.
