🍽️ Tender turkey breast with spicy chili vinaigrette

Ingredients
- 1 kg turkey breast fillet
- salt

- 2 tbsp oil
- 4 tbsp white wine vinegar

- 2 tsp medium-hot mustard
- 1 tsp honey
- 1 red onion
- 2 small red chili peppers
- 8 tbsp oil
- 1 box cress
Instructions
- 1. Rub the turkey breast with salt and pepper.
- 2. Tie the meat together with kitchen twine.
- 3. Heat oil in a casserole dish.
- 4. Sear the turkey breast on all sides.
- 5. Pour in 1/8 liter of water.
- 6. Let the turkey breast simmer gently for one hour.
- 7. Let the meat cool down completely.
- 8. Whisk vinegar with salt, pepper, mustard, and honey.
- 9. Peel the onion and dice it finely.
- 10. Slit the chili peppers lengthwise.
- 11. Remove the seeds from the chili peppers.
- 12. Dice the chili peppers very finely.
- 13. Stir the onions and chili into the vinegar mixture.
- 14. Gradually beat the oil into the mixture.
- 15. Trim the cress.
- 16. Stir the cress into the vinaigrette.
- 17. Slice the turkey breast into thin slices.
- 18. Place the slices on a platter.
- 19. Pour the vinaigrette over the meat.
- 20. Cover the platter.
- 21. Let the dish marinate for at least one hour.
