🍽️ Crispy Turkey Breast Ring with Bacon and Sauerkraut

Ingredients
- 1 kg turkey breast fillet (whole)
- 2 tbsp liquid honey
- 1 tsp vegetable oil
- salt
- pepper (from the mill)
- 65 g bacon (sliced)
- 150 ml vegetable broth
- 600 g sauerkraut (can)
- 2 bay leaves
- 4 juniper berries
- 2 cloves
- 100 ml vegetable broth
- 50 ml dry white wine
- salt
- 1 pinch sugar
- pepper
- 2 small red onions
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the turkey breast under running water and pat it dry with kitchen paper.
- 3. Whisk honey, oil, salt, and pepper together in a small bowl to make a marinade.
- 4. Coat the turkey breast thoroughly with the marinade.
- 5. Wrap slices of bacon around the breast so that the meat is completely covered.
- 6. Place the meat in a roasting pan and add a little vegetable broth.
- 7. Put the roasting pan into the hot oven and bake the meat for about 1 hour.
- 8. Baste the meat repeatedly with its own juices from the roasting pan during the first 45 minutes.
- 9. Let the meat bake without basting for the last 15 minutes so that the bacon becomes crispy.
- 10. Put the sauerkraut together with the spices into a pot.
- 11. Pour broth and wine over the kraut.
- 12. Let the kraut simmer gently covered for about 35 minutes.
- 13. Season the sauerkraut to taste with salt, sugar, and pepper at the end.
- 14. Peel the onions and slice them into thin rings.
- 15. Take the turkey breast out of the oven and place it on a serving platter.
- 16. Place the warm sauerkraut next to the meat.
- 17. Garnish the dish with the raw onion rings.
