  1. 1. Rub the turkey meat generously with sea salt.
  2. 2. Place the meat into a roasting bag.
  3. 3. Seal the bag tightly.
  4. 4. Pierce a hole in the center of the top side of the bag with a fork.
  5. 5. Preheat the oven to 120 degrees Celsius.
  6. 6. Roast the meat in the preheated oven for about 3 hours.
  7. 7. Wash the red cabbage and remove the hard core end.
  8. 8. Cut the cabbage into thin strips.
  9. 9. Put on disposable gloves, as the juice stains strongly.
  10. 10. Knead the cut cabbage vigorously with your gloved hands.
  11. 11. Peel the onion.
  12. 12. Halve the onion.
  13. 13. Cut the onion into fine cubes.
  14. 14. Wash the apple.
  15. 15. Peel the apple.
  16. 16. Quarter the apple.
  17. 17. Remove the core.
  18. 18. Dice the apple.
  19. 19. Juice the oranges.
  20. 20. Pour the orange juice into a pot.
  21. 21. Add all other ingredients for the sauce to the pot.
  22. 22. Remove the cloves, bay leaf, and cinnamon stick from the pot.
  23. 23. Stir in the currant jelly.
  24. 24. Season the sauce to taste with salt and pepper.
  25. 25. Take the fully cooked roast out of the oven.
  26. 26. Slice the meat.
  27. 27. Place the meat on plates.
  28. 28. Add some of the cooking juices.
  29. 29. Serve the roast garnished with the red cabbage.
  30. 30. Garnish additionally with a wedge of orange.
