🍽️ Juicy Turkey Roast with Sweet and Sour Red Cabbage

Ingredients
- 800 g Turkey Leg (1 Turkey Leg)
- Sea Salt
- 500 g Red Cabbage
- 1 Onion
- 1 Sour Apple
- 2 Oranges
- 2 Cloves
- 1 Bay Leaf
- 1 Cinnamon Stick
- 1 tbsp Fruit Vinegar
- 0.125 l Red Wine
- 1 tbsp Vegetable Broth
- 1 tsp Oil
- 1 tsp Currant Jelly
- 2 Orange Wedges
Instructions
- 1. Rub the turkey meat generously with sea salt.
- 2. Place the meat into a roasting bag.
- 3. Seal the bag tightly.
- 4. Pierce a hole in the center of the top side of the bag with a fork.
- 5. Preheat the oven to 120 degrees Celsius.
- 6. Roast the meat in the preheated oven for about 3 hours.
- 7. Wash the red cabbage and remove the hard core end.
- 8. Cut the cabbage into thin strips.
- 9. Put on disposable gloves, as the juice stains strongly.
- 10. Knead the cut cabbage vigorously with your gloved hands.
- 11. Peel the onion.
- 12. Halve the onion.
- 13. Cut the onion into fine cubes.
- 14. Wash the apple.
- 15. Peel the apple.
- 16. Quarter the apple.
- 17. Remove the core.
- 18. Dice the apple.
- 19. Juice the oranges.
- 20. Pour the orange juice into a pot.
- 21. Add all other ingredients for the sauce to the pot.
- 22. Remove the cloves, bay leaf, and cinnamon stick from the pot.
- 23. Stir in the currant jelly.
- 24. Season the sauce to taste with salt and pepper.
- 25. Take the fully cooked roast out of the oven.
- 26. Slice the meat.
- 27. Place the meat on plates.
- 28. Add some of the cooking juices.
- 29. Serve the roast garnished with the red cabbage.
- 30. Garnish additionally with a wedge of orange.
