  1. 1. Rinse the turkey breast under running water and pat it completely dry with kitchen paper.
  2. 2. Peel the carrots, onions, and garlic.
  3. 3. Cut the carrots and onions into large chunks.
  4. 4. Season the meat generously with salt and pepper.
  5. 5. Heat oil in a casserole dish and sear the meat on all sides over medium heat.
  6. 6. Add the prepared vegetables to the meat in the casserole dish.
  7. 7. Preheat your oven to 180 degrees Celsius (convection 160 degrees Celsius or gas mark 2 to 3).
  8. 8. Place the casserole in the oven and roast the meat with the vegetables for about 20 minutes.
  9. 9. Pour some meat broth over the meat.
  10. 10. Let the meat simmer until cooked through for another 50 minutes.
  11. 11. Baste the meat repeatedly with the pan juices from the pot during the cooking time.
  12. 12. Add more broth as needed to prevent the bottom from drying out.
  13. 13. Pour honey over the meat in the last 10 minutes of cooking time to glaze it.
  14. 14. Slice the finished meat.
  15. 15. Serve the meat slices together with the vegetables.
