  1. 1. Rinse the turkey breast under running water.
  2. 2. Pat the meat completely dry with kitchen paper.
  3. 3. Season the meat lightly with salt and pepper.
  4. 4. Tie the roast with kitchen twine if necessary to help it keep its shape.
  5. 5. Heat oil and butter in a large pan.
  6. 6. Sear the roast on all sides briefly until golden brown.
  7. 7. Remove the roast from the pan and set it aside.
  8. 8. Peel the shallots.
  9. 9. Halve the shallots lengthwise.
  10. 10. Cut the shallots into wedges.
  11. 11. Close one end of the roasting bag.
  12. 12. Place the roast inside the bag.
  13. 13. Pour the broth into the bag.
  14. 14. Add the shallots to the bag.
  15. 15. Close the other end of the bag.
  16. 16. Make a few small holes in the bag according to the package instructions.
  17. 17. Place the bag on a baking sheet.
  18. 18. Whisk soy sauce, orange marmalade, honey, and a few drops of Tabasco in a small bowl.
  19. 19. Stir until a smooth marinade has formed.
  20. 20. Remove the roasting bag from the oven.
  21. 21. Turn on the oven grill.
  22. 22. Take the roast out of the bag.
  23. 23. Place the roast on a baking sheet lined with aluminum foil.
  24. 24. Brush the roast generously with the marinade.
  25. 25. Grill the roast for 6 to 8 minutes.
