🍽️ Festive Turkey Breast Roll with Figs

Ingredients
- 4 Tomaten
- 2 Zwiebeln
- 750 g Putenbrustfilet
- Salz (Pfeffer)
- 2 tbsp oil
- 2 tsp Thymianblätter
- 0.5 Bio-Orange (abgeriebene Schale)
- 0.25 l trockener Cidre (oder Wermut)
- 400 ml Geflügelfond (Glas)
- 4 frische Feigen
- 40 g Butter
- 40 g halved, peeled almond kernels
- 2 tbsp Zucker
- 1 Orange (ausgepressten Saft)

- 1 tbsp Saucenbinder
- 1 pinch Zucker
Instructions
- 1. Score a cross into the bottom of the tomatoes.
- 2. Pour boiling water over the tomatoes briefly.
- 3. Immediately plunge the tomatoes into cold water to stop the process.
- 4. Peel the skin off the tomatoes.
- 5. Remove the green stem and seeds from the flesh.
- 6. Dice the tomato flesh into small cubes.
- 7. Peel the onions.
- 8. Dice the onions into small cubes as well.
- 9. Tightly roll up the turkey breast.
- 10. Tie the roll securely with kitchen twine.
- 11. Rub the meat generously with salt.
- 12. Rub the meat generously with pepper.
- 13. Heat oil in a casserole dish.
- 14. Sear the meat roll on all sides over high heat.
- 15. Add the onion cubes to the meat.
- 16. Add fresh thyme sprigs to the pot.
- 17. Add the orange zest to the pot.
- 18. Add the tomato cubes to the pot.
- 19. Deglaze the meat with cider or vermouth.
- 20. Add poultry stock to the pot.
- 21. Cover the pot with a lid.
- 22. Simmer the meat on low heat for about 50 to 60 minutes.
- 23. Wash the figs.
- 24. Cut the figs into quarters.
- 25. Heat butter in a pan.
- 26. Briefly toast the almonds in the butter.
- 27. Add the figs to the pan.
- 28. Sprinkle the figs with sugar.
- 29. Let the figs simmer for 2 to 3 minutes.
- 30. Pour orange juice into the pan.
- 31. Reduce the liquid almost completely over high heat.
- 32. Season the figs with pink peppercorns.
- 33. Remove the turkey breast from the sauce.
- 34. Keep the turkey breast warm.
- 35. Strain the sauce through a fine sieve into a clean pot.
- 36. Bring the sauce to a boil.
- 37. Thicken the sauce slightly with a sauce thickener.
- 38. Season the sauce with salt.
- 39. Season the sauce with pepper.
- 40. Add a pinch of sugar to the sauce.
- 41. Slice the turkey breast.
- 42. Serve the turkey slices with the sauce.
- 43. Serve the turkey slices with the figs.
- 44. Serve delicious croquettes or spätzle as a side dish.
