  2. 2. Season the meat generously with salt and pepper.
  3. 3. Preheat the oven to 200 degrees.
  4. 4. Pour the remaining oil into a casserole pot and heat it slightly.
  5. 5. Sear the turkey fillet in the hot oil on all sides.
  6. 6. Add the rosemary sprigs to the pot.
  7. 7. Deglaze the meat with the wine.
  8. 8. Place the pot in the center of the oven for 10 minutes.
  9. 9. Set the convection temperature to 180 degrees during this time.
  10. 10. Reduce the oven temperature to 160 degrees (convection 140 degrees).
  11. 11. Let the meat cook in the oven for another 30 minutes.
  12. 12. Baste the meat with the sauce occasionally during the cooking time.
  13. 13. Remove the cooked meat from the pot.
  14. 14. Pour the cooking liquid through a fine sieve.
  15. 15. Moisten the meat with the strained liquid.
  16. 16. Let the meat cool down completely in the refrigerator with the lid on.

  29. 29. Take the chilled meat out of the marinade.
  30. 30. Slice the meat into paper-thin slices using a sharp knife.
  31. 31. Place the meat slices on a plate.
  32. 32. Drizzle the slices with a little marinade.
  33. 33. Spread the pesto evenly over the slices.
  34. 34. Keep the plate covered in a cool place.
  35. 35. Serve the dish when it is ready.
