🍽️ Tender Turkey Strips with Homemade Herb Pesto

Ingredients
- 600 g turkey breast fillet
- 4 tbsp olive oil
- salt
- white pepper (from the mill)
- 2 sprigs rosemary
- 1 handful wild garlic leaves
- 1 bunch parsley
- 2 garlic cloves
- 50 g hazelnut kernels
- 50 g parmesan
- 50 ml hazelnut oil
- 50 ml olive oil
- salt
Instructions
- 1. Rub the turkey breast fillet with one tablespoon of olive oil.
- 2. Season the meat generously with salt and pepper.
- 3. Preheat the oven to 200 degrees.
- 4. Pour the remaining oil into a casserole pot and heat it slightly.
- 5. Sear the turkey fillet in the hot oil on all sides.
- 6. Add the rosemary sprigs to the pot.
- 7. Deglaze the meat with the wine.
- 8. Place the pot in the center of the oven for 10 minutes.
- 9. Set the convection temperature to 180 degrees during this time.
- 10. Reduce the oven temperature to 160 degrees (convection 140 degrees).
- 11. Let the meat cook in the oven for another 30 minutes.
- 12. Baste the meat with the sauce occasionally during the cooking time.
- 13. Remove the cooked meat from the pot.
- 14. Pour the cooking liquid through a fine sieve.
- 15. Moisten the meat with the strained liquid.
- 16. Let the meat cool down completely in the refrigerator with the lid on.
- 17. Wash the fresh herbs under running water.
- 18. Remove the tough stems from the herbs.
- 19. Chop the herbs finely.
- 20. Peel the garlic.
- 21. Dice the garlic finely.
- 22. Chop the hazelnuts finely.
- 23. Grate the Parmesan finely.
- 24. Crush the herbs and garlic finely in a mortar or blender.
- 25. Add the chopped hazelnuts gradually.
- 26. Add the oil gradually.
- 27. Add the grated Parmesan gradually.
- 28. Season the pesto with salt.
- 29. Take the chilled meat out of the marinade.
- 30. Slice the meat into paper-thin slices using a sharp knife.
- 31. Place the meat slices on a plate.
- 32. Drizzle the slices with a little marinade.
- 33. Spread the pesto evenly over the slices.
- 34. Keep the plate covered in a cool place.
- 35. Serve the dish when it is ready.
