🍽️ Oven-baked Turkey with Colorful Vegetables

Ingredients
- 2 red bell peppers
- 5 spring onions
- 2 tbsp vegetable oil
- 250 g cooked ham
- 20 g breadcrumbs
- 40 g crème fraîche
- 30 g grated cheese (e.g. Emmental)
- 1 tsp lemon juice
- salt
- pepper
- 4 turkey cutlets (approx. 150 g each)
Instructions
- 1. Wash the bell peppers thoroughly.
- 2. Cut the bell peppers in half.
- 3. Remove the seeds and the white inner membranes.
- 4. Dice the bell pepper flesh into approx. 1 cm cubes.
- 5. Wash the spring onions and trim the ends.
- 6. Slice the spring onions into thin rings.
- 7. Heat oil in a frying pan.
- 8. Fry the pepper and spring onion vegetables for approx. 5 minutes.
- 9. Remove the pan from the heat.
- 10. Let the vegetables cool down.
- 11. Dice the ham into approx. 1 cm cubes.
- 12. Mix the cooled vegetables with the ham.
- 13. Add the breadcrumbs.
- 14. Add the crème fraîche.
- 15. Add the cheese.
- 16. Mix everything well together.
- 17. Add the lemon juice.
- 18. Season with salt.
- 19. Season with pepper.
- 20. Taste the mixture and adjust seasoning if needed.
- 21. Preheat the oven to 200°C top and bottom heat.
- 22. Line a baking tray with baking paper.
- 23. Rinse the turkey cutlets briefly.
- 24. Pat the cutlets dry with a kitchen towel.
- 25. Distribute the vegetable mixture over the turkey cutlets.
- 26. Press the vegetable layer down slightly.
- 27. Place the tray in the preheated oven.
- 28. Bake the turkey for approx. 20 minutes.
- 29. Serve the dish with a green salad.
