🍝 Stir-fried noodles with turkey, spinach and peanuts

Ingredients
- 250 g fresh spinach leaves
- salt
- 500 g turkey breast fillet (kitchen-ready, skinless)
- 2 cm fresh ginger
- 1 clove garlic
- 400 g Chinese egg noodles (Asian grocery store)
- 100 g salted peanut kernels
- 2 tbsp peanut oil
- pepper (from a mill)
- lime juice
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove any wilted or damaged leaves.
- 3. Cut off the tough stems from the spinach.
- 4. Bring a pot of water and salt to a boil.
- 5. Add the spinach to the boiling water.
- 6. Heat the spinach briefly until it wilts.
- 7. Pour the spinach into a colander and let the water drain off.
- 8. Rinse the spinach immediately with cold water to cool it down.
- 9. Squeeze the spinach firmly with your hands to remove excess moisture.
- 10. Chop the spinach into coarse pieces.
- 11. Rinse the turkey meat under running water.
- 12. Pat the meat dry with kitchen paper.
- 13. Cut the meat into thin strips.
- 14. Peel the garlic clove.
- 15. Peel a small piece of ginger.
- 16. Press the garlic through a garlic press.
- 17. Press the ginger through a garlic press.
- 18. Bring a pot of water and salt to a boil.
- 19. Cook the noodles in the boiling water.
- 20. Cook the noodles until they are firm to the bite (al dente).
- 21. Heat a wok or a large pan without fat.
- 22. Lightly roast the peanuts in the hot wok.
- 23. Take the roasted peanuts out of the wok.
- 24. Set the peanuts aside.
- 25. Add oil to the wok.
- 26. Heat the oil in the wok.
- 27. Season the meat with pepper.
- 28. Fry the meat in the wok until golden brown on all sides.
- 29. Add the chopped spinach to the wok.
- 30. Add the pressed garlic to the wok.
- 31. Add the pressed ginger to the wok.
- 32. Add lime juice to the mixture.
- 33. Season the dish with salt.
- 34. Season the dish with pepper.
- 35. Taste the spices and adjust them if necessary.
- 36. Pour the cooked noodles into a colander.
- 37. Take half of the roasted peanuts.
- 38. Add the noodles and half of the peanuts to the wok.
- 39. Toss everything well to mix it.
- 40. Serve the noodles in small bowls.
- 41. Serve the remaining peanuts separately.
