  3. 3. Cut off the tough stems from the spinach.
  4. 4. Bring a pot of water and salt to a boil.
  5. 5. Add the spinach to the boiling water.
  6. 6. Heat the spinach briefly until it wilts.
  7. 7. Pour the spinach into a colander and let the water drain off.
  8. 8. Rinse the spinach immediately with cold water to cool it down.
  9. 9. Squeeze the spinach firmly with your hands to remove excess moisture.
  10. 10. Chop the spinach into coarse pieces.
  11. 11. Rinse the turkey meat under running water.
  12. 12. Pat the meat dry with kitchen paper.
  13. 13. Cut the meat into thin strips.
  14. 14. Peel the garlic clove.
  15. 15. Peel a small piece of ginger.
  16. 16. Press the garlic through a garlic press.
  17. 17. Press the ginger through a garlic press.
  18. 18. Bring a pot of water and salt to a boil.
  19. 19. Cook the noodles in the boiling water.
  20. 20. Cook the noodles until they are firm to the bite (al dente).

  22. 22. Lightly roast the peanuts in the hot wok.
  23. 23. Take the roasted peanuts out of the wok.
  24. 24. Set the peanuts aside.

  27. 27. Season the meat with pepper.
  28. 28. Fry the meat in the wok until golden brown on all sides.
  29. 29. Add the chopped spinach to the wok.

  32. 32. Add lime juice to the mixture.
  33. 33. Season the dish with salt.
