  1. 1. Rinse the turkey breast fillet under cold water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the meat into cubes of about 2 centimeters.
  4. 4. Peel the garlic cloves.
  5. 5. Sprinkle the garlic with a pinch of salt.
  6. 6. Mash the garlic into a paste using the flat side of a knife.
  7. 7. Wash the fresh tarragon under running water.
  8. 8. Shake the herb dry.
  9. 9. Pluck the fine leaves from the stems.
  10. 10. Cut the tarragon leaves into fine strips.
  11. 11. Place the mashed garlic into a bowl.
  12. 12. Add the cut tarragon strips.
  13. 13. Add the mustard to the bowl.
  14. 14. Add the oil to the bowl.
  15. 15. Whisk the marinade ingredients together well.
  16. 16. Add the meat cubes to the marinade.
  17. 17. Gently fold the meat cubes in so they are completely coated.
  18. 18. Cover the bowl.
  19. 19. Place the bowl in the refrigerator.
  20. 20. Let the meat marinate for at least 1 hour.
