🍽️ Spiced Pumpkin Muffins

Ingredients
- 300 g pumpkin flesh
- 1 tbsp melted butter
- 1 tbsp honey
- 3 egg whites
- 3 egg yolks
- 60 g sugar
- 1 pinch ground cloves
- 1 pinch cinnamon
- 50 g chopped hazelnuts
- 50 chopped almond kernels
- 30 g ground almond kernels
- 1 tsp baking powder
- 50 g flour
Instructions
- 1. Place the paper liners into the cups of your muffin tin.
- 2. Preheat the oven to 180 degrees Celsius fan-forced.
- 3. Cut the pumpkin flesh into small cubes.
- 4. Melt the butter in a hot pan.
- 5. Sauté the pumpkin cubes in the butter.
- 6. Stir the honey into the pumpkin mixture.
- 7. Let the honey caramelize for a short moment.
- 8. Remove the pan from the heat.
- 9. Let the pumpkin mixture cool down completely.
- 10. Beat the egg whites until stiff.
- 11. Whisk the egg yolks with the sugar.
- 12. Add three tablespoons of warm water to the egg yolk mixture.
- 13. Whisk the egg yolk mixture until creamy.
- 14. Mix ground cloves and cinnamon.
- 15. Add the nuts to the spice mixture.
- 16. Add the baking powder.
- 17. Mix everything with the flour.
- 18. Add a portion of the dry ingredients to the batter.
- 19. Add a portion of the egg whites to the batter.
- 20. Repeat the alternating addition until all ingredients are used.
- 21. Gently fold in the cooled pumpkin cubes.
- 22. Fill the batter into the paper liners.
- 23. Bake the muffins in the preheated oven.
- 24. Bake for about 25 minutes.
