  1. 1. Place the paper liners into the cups of your muffin tin.
  2. 2. Preheat the oven to 180 degrees Celsius fan-forced.
  3. 3. Cut the pumpkin flesh into small cubes.
  4. 4. Melt the butter in a hot pan.
  5. 5. Sauté the pumpkin cubes in the butter.
  6. 6. Stir the honey into the pumpkin mixture.
  7. 7. Let the honey caramelize for a short moment.
  8. 8. Remove the pan from the heat.
  9. 9. Let the pumpkin mixture cool down completely.
  10. 10. Beat the egg whites until stiff.
  11. 11. Whisk the egg yolks with the sugar.
  12. 12. Add three tablespoons of warm water to the egg yolk mixture.
  13. 13. Whisk the egg yolk mixture until creamy.
  14. 14. Mix ground cloves and cinnamon.
  15. 15. Add the nuts to the spice mixture.
  16. 16. Add the baking powder.
  17. 17. Mix everything with the flour.
  18. 18. Add a portion of the dry ingredients to the batter.
  19. 19. Add a portion of the egg whites to the batter.
  20. 20. Repeat the alternating addition until all ingredients are used.
  21. 21. Gently fold in the cooled pumpkin cubes.
  22. 22. Fill the batter into the paper liners.
  23. 23. Bake the muffins in the preheated oven.
  24. 24. Bake for about 25 minutes.
