  2. 2. Rinse an orange under hot water.
  3. 3. Remove the orange peel using a vegetable peeler.
  4. 4. Cut out small decorations like hearts or clovers from the orange peel.
  5. 5. Squeeze the juice out of the orange.
  6. 6. Whisk sour cream, cream cheese, and 2 tablespoons of orange juice until smooth.
  7. 7. Stir chopped pistachios into the cream.
  8. 8. Season the cream with salt and pepper to taste.
  9. 9. Arrange the larger pumpernickel base plates on a serving platter.
  10. 10. Pipe the cream onto the pumpernickel base plates using a star tip.
  11. 11. Place the smaller pumpernickel circles on top of the cream.
  12. 12. Garnish the bites with the orange peel decorations, halved pistachios, and chive rolls.
  13. 13. Serve the finished bites immediately.
