🍽️ Crunchy Pumpernickel Bites with Pistachio Cream

Ingredients
- 20 pumpernickel rounds
- 1 unpeeled orange
- 150 g sour cream
- 100 g cream cheese
- 80 g ground pistachio kernels
- salt
- pepper
- 10 pistachios (halved)
- 4 tbsp chive rings
Instructions
- 1. Take 10 round pumpernickel cookies and cut them slightly smaller using a round cookie cutter.
- 2. Rinse an orange under hot water.
- 3. Remove the orange peel using a vegetable peeler.
- 4. Cut out small decorations like hearts or clovers from the orange peel.
- 5. Squeeze the juice out of the orange.
- 6. Whisk sour cream, cream cheese, and 2 tablespoons of orange juice until smooth.
- 7. Stir chopped pistachios into the cream.
- 8. Season the cream with salt and pepper to taste.
- 9. Arrange the larger pumpernickel base plates on a serving platter.
- 10. Pipe the cream onto the pumpernickel base plates using a star tip.
- 11. Place the smaller pumpernickel circles on top of the cream.
- 12. Garnish the bites with the orange peel decorations, halved pistachios, and chive rolls.
- 13. Serve the finished bites immediately.
