🍽️ Jackfruit Burger with Red Cabbage Salad

Ingredients
- 500 g red cabbage
- salt
- pepper
- 1 tsp coconut palm sugar
- 1 tbsp white wine vinegar
- 2 tbsp walnut oil
- 125 g small oranges (1 small orange)
- 280 g jackfruit (can; drained weight)
- 2 shallots
- 2 garlic cloves
- 1 tbsp olive oil
- 150 g vegan barbecue sauce
- 6 romaine lettuce leaves
- 0.5 avocado
- 3 burger buns
Instructions
- 1. Wash the red cabbage thoroughly under running water.
- 2. Remove the hard core in the center of the cabbage head.
- 3. Slice the vegetable into very thin strips.
- 4. Place the cut strips into a large bowl.
- 5. Season the cabbage with salt, pepper, and coconut blossom sugar.
- 6. Massage the mixture firmly with your hands.
- 7. Wait until liquid is released from the cabbage.
- 8. Pour off the released liquid.
- 9. Then mix the cabbage with vinegar and walnut oil.
- 10. Peel the oranges and remove all white skin remnants.
- 11. Cut the flesh segments out of the orange in a wedge shape.
- 12. Roughly chop the orange pieces.
- 13. Stir the orange pieces into the red cabbage.
- 14. Rinse the jackfruit pieces under cold water.
- 15. Let the jackfruit drain well in a sieve.
- 16. Peel the shallots.
- 17. Slice the shallots into thin strips.
- 18. Peel the garlic.
- 19. Dice the garlic finely.
- 20. Heat the olive oil in a pan.
- 21. Add the shallots and the jackfruit to the hot pan.
- 22. Fry the ingredients over high heat.
- 23. Fry for 5 to 8 minutes.
- 24. Add the garlic to the pan.
- 25. Fry the garlic for 1 minute.
- 26. Add the BBQ sauce to the jackfruit mixture.
- 27. Pour in 50 milliliters of water.
- 28. Simmer the mixture over low heat.
- 29. Simmer for 10 to 15 minutes.
- 30. Stir the mixture occasionally.
- 31. Wash the salad under running water.
- 32. Shake the salad dry.
- 33. Pit the avocado.
- 34. Remove the flesh from the shell.
- 35. Slice the avocado flesh into strips.
- 36. Halve the burger buns.
- 37. Toast the buns briefly in a hot pan.
- 38. Remove the jackfruit from the pan.
- 39. Shred the jackfruit finely using two forks.
- 40. Fill the burger buns with the salad.
- 41. Place the shredded jackfruit on the buns.
- 42. Add some red cabbage salad.
- 43. Place the avocado strips on top.
- 44. Serve the remaining red cabbage salad along with the burgers.
