  4. 4. Cook the potatoes for about 20 minutes until tender.
  5. 5. Peel the onion and remove the outer layers.
  6. 6. Dice the onion into fine cubes.
  7. 7. Rinse the chili pepper under running water.
  8. 8. Cut the chili pepper in half lengthwise.
  9. 9. Remove the seeds and white inner membranes from the chili.
  10. 10. Dice the deseeded chili into fine cubes.
  11. 11. Wash the tomatoes thoroughly.
  12. 12. Cut the tomatoes into quarters.
  13. 13. Remove the seeds from the tomato quarters.
  14. 14. Dice the tomato flesh into small cubes.
  15. 15. Heat the butter in a pot.
  16. 16. Add the mustard seeds to the hot butter.
  17. 17. Fry the mustard seeds briefly.
  18. 18. Immediately place a lid on the pot to avoid splashing.
  19. 19. Add the diced onion to the pot.
  20. 20. Add the diced chili to the pot.
  21. 21. Let the onions and chili sweat briefly.
  22. 22. Stir the turmeric into the mixture.
  23. 23. Stir the garam masala into the mixture.
  24. 24. Let the spices sweat with the onions briefly.
  25. 25. Deglaze the mixture with the broth.
  26. 26. Stir the salt into the broth.
  27. 27. Stir the lemon juice into the broth.
  28. 28. Let the spiced broth simmer uncovered for about 3 minutes.
  29. 29. Drain the cooking water from the potatoes.
  30. 30. Press the hot potatoes through a potato ricer.
  31. 31. Add the mashed potatoes to the spiced broth.
  32. 32. Add the tomato cubes to the spiced broth.
  33. 33. Mix everything well together.
  34. 34. Cut the lemon into wedges.
  35. 35. Serve the mash with the lemon wedges.
