  1. 1. Put milk, water, a pinch of salt, some sugar, and the butter into a pot.
  2. 2. Bring the mixture to a boil while stirring.
  3. 3. Remove the pot from the heat briefly.
  4. 4. Pour in the flour all at once.
  5. 5. Stir vigorously with a wooden spoon.
  6. 6. Stop stirring when the dough forms a firm ball that pulls away from the bottom of the pot.
  7. 7. Make sure a white layer forms on the bottom of the pot.
  8. 8. Transfer the dough to a separate bowl.
  9. 9. Stir in one egg into the dough immediately.
  10. 10. Wait until the dough is smooth again.
  11. 11. Add the next egg as soon as the previous stage is reached.
  12. 12. Check if the dough shines and falls heavily from the spoon.
  13. 13. Fill the finished dough into a piping bag fitted with a star tip.
  14. 14. Line a baking sheet with parchment paper.
  15. 15. Sprinkle sugar crystals on the parchment paper.
  16. 16. Pipe tennis ball-sized pastes onto the sheet.
  17. 17. Also sprinkle the tops of the pastes with sugar crystals.
  18. 18. Preheat the oven to 200 degrees.
