  1. 1. Put milk, water, salt, sugar, and butter in a pot and bring the mixture to a boil. Stir in the flour and keep stirring until the dough forms a large ball that pulls away from the bottom of the pot and a white layer forms on the bottom.
  2. 2. Transfer the dough to a bowl. Immediately stir in one egg. Wait until the dough is smooth and pliable again before stirring in the next egg.
  3. 3. The dough is ready when it shines and falls heavily from the spoon.
  4. 4. Fill the dough into a piping bag fitted with a large star tip. Pipe profiteroles (6 cm diameter and 2 cm high) onto a baking sheet lined with baking paper.
  5. 5. Bake the profiteroles in the preheated oven at 200 degrees for about 30 minutes until golden brown. Remove them from the oven and let them cool.
  6. 6. Cut the chicken meat very small. Mix it with the thyme leaves, lemon juice, oil, salt, pepper, and crème fraîche.
  7. 7. Cut open the cooled profiteroles and fill them with the chicken mixture. Serve immediately.
