🍰 Airy Cranberry-Yogurt with Chocolate-Almond Sticks

Ingredients
- 200 g cranberries (jar; unsweetened)
- 3.5 sheets red gelatin
- 250 g yogurt (1.5 % fat)
- 2 very fresh egg whites
- 25 g sugar (1 heaped tbsp)
- 50 g dark chocolate
- 50 g almond sticks (4 tbsp)
Instructions
- 1. Put the cranberries into a tall container.
- 2. Puree the berries finely using a hand blender.
- 3. Soak the gelatin in cold water.
- 4. Warm up two or three tablespoons of the cranberry puree in a small saucepan.
- 5. Squeeze the soaked gelatin well.
- 6. Dissolve the gelatin in the warm puree while stirring.
- 7. Stir the gelatin mixture into the remaining cranberry puree.
- 8. Stir the yogurt into the cranberry-gelatin mixture.
- 9. Separate the eggs.
- 10. Use the egg yolks for another purpose.
- 11. Put the egg whites into a tall container.
- 12. Whisk the egg whites with the beaters of a hand mixer until stiff peaks form.
- 13. Stream in the sugar while whisking.
- 14. Gently fold the egg whites into the yogurt-fruit mixture.
- 15. Fill the mixture into glasses.
- 16. Chill the glasses.
- 17. Chop the chocolate roughly.
- 18. Put the chocolate pieces into a bowl.
- 19. Melt the chocolate over a bowl of warm water.
- 20. Add the almond sticks to the melted chocolate.
- 21. Stir until the almonds are coated all around with chocolate.
- 22. Place a piece of baking paper on the work surface.
- 23. Place the chocolate-almond mixture in stick shapes on the paper using a teaspoon.
- 24. Let the sticks set completely.
- 25. Carefully peel the sticks off the paper.
- 26. Serve the sticks together with the yogurt foam.
