🍽️ Delicious Ginger Truffles

Ingredients
- 50 g ginger (candied)
- 1 jar ginger jam (225 g)
- 56 milk chocolate half-shells (oval)
- 150 g milk chocolate couverture
Instructions
- 1. Place the ginger pieces in a sieve and let the excess liquid drain off.
- 2. Set aside about one quarter of the drained ginger pieces for later decoration.
- 3. Finely chop the remaining ginger.
- 4. Put the finely chopped ginger into a bowl.
- 5. Mix the ginger thoroughly with the ginger jam in this bowl.
- 6. Leave the bowl with the mixture uncovered and let it stand overnight.
- 7. Fill the prepared ginger mixture into a piping bag.
- 8. Insert a star tip (a nozzle with several small openings for decorative patterns) into the tip of the piping bag.
- 9. Fill the half-spheres in the truffle mold with the ginger mixture.
- 10. Do not fill the molds completely to the brim, but leave a small gap.
- 11. Let the filled truffle molds rest for 15 minutes.
- 12. Melt the chopped couverture (a high-quality chocolate with high cocoa and sugar content) in a double boiler.
- 13. Let the melted chocolate cool down briefly until it is lukewarm.
- 14. Fill the cooled chocolate into a clean piping bag.
- 15. Seal the truffle half-shells with the chocolate from the piping bag.
- 16. Let the chocolate set briefly until the surface is bound.
- 17. Cut the previously reserved ginger pieces into small, decorative pieces.
- 18. Place the ginger pieces as decoration on the finished truffles.
- 19. Place the finished truffles in a cool place until you serve them.
