  1. 1. Put the dates, almonds, and cocoa powder into a food processor.
  2. 2. Add two tablespoons of rum.
  3. 3. Blend the ingredients until a fine mixture forms.
  4. 4. Check if the mixture is pliable and moldable.
  5. 5. If the mixture seems too dry, add a little more rum and mix again.
  6. 6. Shape the mixture into 20 to 25 small balls.
  7. 7. Melt the chocolate coating over a hot water bath.
  8. 8. Dip each ball into the melted chocolate until it is completely covered.
  9. 9. Roll the coated balls in coconut flakes or chopped nuts, as desired.
  10. 10. Place the pralines on baking paper.
  11. 11. Let the chocolate dry in the air.
