🍽️ Cherry Pralines

Ingredients
- 40 cherries
- 50 ml cherry liqueur
- 40 large truffle hollow shells (dark chocolate)
- 300 g dark chocolate (min. 60% cocoa content)
- 50 ml whipping cream
- 75 g chocolate sprinkles
Instructions
- 1. Thoroughly wash the cherries under running water.
- 2. Carefully remove the pits from the fruit, but leave the stems attached.
- 3. Pour the liqueur over the pitted cherries.
- 4. Let the fruit soak in the liqueur for about 30 minutes.
- 5. Place the empty praline shells into the closing mold.
- 6. Place one marinated cherry into each shell.
- 7. Fill the hollow space in the shell with a little liqueur.
- 8. Finely chop 100 grams of the chocolate.
- 9. Put the chopped chocolate into a bowl.
- 10. Bring the cream to a boil in a pot.
- 11. Pour the hot cream directly over the chocolate.
- 12. Stir the mixture from the center outwards.
- 13. Continue stirring until the chocolate is completely melted and a smooth, thick cream has formed.
- 14. Let the chocolate cream cool down until it is spreadable.
- 15. Seal the opening of the praline shells around the stem with the cooled cream.
- 16. Let the pralines set for at least 1 hour.
- 17. Finely chop the remaining chocolate.
- 18. Place a pot with hot water on the stove.
- 19. Place a heatproof bowl with the chopped chocolate over the hot water (bain-marie).
- 20. Melt the chocolate in the water bath until it is liquid.
- 21. Dip the cherries into the melted chocolate.
- 22. Roll the bottom part of the praline in the sprinkles.
- 23. Place the finished pralines on a tray.
