🍽️ Chicken Skewers with Tomatoes

Ingredients
- 3 garlic cloves
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 untreated lime (use the grated zest and the juice)
- cayenne pepper
- salt
- 600 g poult breast fillet or chicken breast fillet
- 4 cinnamon sticks
- 500 g tomatoes
- 3 sprigs thyme
- 3 tbsp olive oil
- 1 tbsp sugar
- 2 pinches saffron powder
- pepper (from the mill)
- 3 tbsp butter
Instructions
- 1. Peel the garlic clove.
- 2. Mix honey, balsamic vinegar, the grated zest and juice of the lime, cayenne pepper, and salt in a bowl.
- 3. Press the garlic directly into this marinade.
- 4. Cut the chicken breast fillet into small, bite-sized pieces.
- 5. Pierce the meat cubes with a long, sharp knife onto the cinnamon sticks to form skewers.
- 6. Place the skewers on a plate.
- 7. Drizzle the skewers with the marinade.
- 8. Let the skewers marinate covered for about 20 minutes.
- 9. Wash the tomatoes thoroughly.
- 10. Rinse the thyme sprigs.
- 11. Shake the thyme sprigs dry.
- 12. Carefully strip the leaves from the stems.
- 13. Heat oil in a pot.
- 14. Add the tomatoes.
- 15. Sprinkle the tomatoes with sugar.
- 16. Caramelize the tomatoes while stirring for 1 to 2 minutes.
- 17. Remove the tomatoes from the pot.
- 18. Add thyme and saffron with 3 to 4 tablespoons of water to the pot.
- 19. Let the flavors reduce briefly.
- 20. Return the tomatoes to the pot.
- 21. Season the tomatoes with salt and pepper.
- 22. Heat butter in a large pan.
- 23. Fry the skewers over low heat for about 5 minutes on each side.
- 24. Serve the skewers together with the tomatoes.
