🍽️ Oven Roasted Poularde with Citrus and Apple Spheres

Ingredients
- 1400 g Poularde (ready for kitchen; 1 Poularde)
- 1 Lemon (untreated, juice and grated zest)
- 1 Lemon
- Salt
- Pepper (from the mill)
- 200 g Onions
- 2 tbsp Olive oil
- 2 tbsp Liquid butter
- 3 Apples
- 1 tbsp Maple syrup
- 0.25 tsp Ginger powder
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Cut the poularde into eight equal pieces.
- 3. Rub the lemon zest over the meat pieces.
- 4. Drizzle the poultry with the lemon juice.
- 5. Season everything generously with salt and pepper.
- 6. Place the meat pieces on a greased baking sheet.
- 7. Peel the lemon thoroughly with a knife.
- 8. Carefully cut out the lemon fillets from the membranes.
- 9. Peel the onions and cut them into eight wedges.
- 10. Add the onions and lemon fillets to the meat pieces.
- 11. Mix the olive oil with the butter.
- 12. Pour the fat mixture evenly over the poultry.
- 13. Place the tray in the oven and bake for about 35 minutes.
- 14. Peel the apples while the meat is baking.
- 15. Use a melon baller to scoop out small apple spheres.
- 16. Mix the apple spheres with maple syrup and ginger.
- 17. Add the apple mixture to the meat after 25 minutes of baking time.
- 18. Finish cooking until everything is done.
- 19. Arrange the chicken pieces on a serving platter.
- 20. Garnish the dish to your liking and serve.
