🍲 Portuguese Kale Stew

Ingredients
- 3 onions
- 2 garlic cloves
- 100 g soft chorizo
- 300 g potatoes (5 potatoes)
- 4 tbsp olive oil
- 1 pinch cumin
- 800 ml classic vegetable broth
- 450 g kale
- 0.5 organic lemon
- 3 pickled piri-piri
- 350 g shrimp (kitchen-ready; without head and shell)
- salt

Instructions
- 1. Peel the onions and garlic. Cut them into very small cubes.
- 2. Cut the sausage into fine cubes.
- 3. Peel the potatoes and wash them. Cut them into cubes.
- 4. Heat two tablespoons of olive oil in a pot.
- 5. Sauté the onions in it over medium heat for seven to eight minutes until translucent. Stir them occasionally.
- 6. Add the garlic and chorizo cubes. Fry everything for two more minutes.
- 7. Add cumin, the potato cubes, and the broth to the pot.
- 8. Bring the mixture to a boil once.
- 9. Let the stew simmer for about twenty minutes over medium heat.
- 10. Wash the kale thoroughly and let it drain well.
- 11. Cut the kale into very fine strips or shred it finely by hand.
- 12. Rinse the lemon under hot water and dry it.
- 13. Grate some lemon zest finely.
- 14. Drain the piri piri peppers and catch the oil.
- 15. Finely chop the peppers.
- 16. Mix the chopped peppers with the caught oil and the lemon zest.
- 17. Puree the potatoes, onions, garlic, and sausage in the broth finely using a hand blender.
- 18. Add the prepared kale to the pot.
- 19. Let everything cook for another ten minutes over medium heat.
- 20. Rinse the prawns and pat them dry.
- 21. Add the prawns to the stew.
- 22. Bring everything to a boil again.
- 23. Cook the prawns for two minutes.
- 24. Season the stew to taste with salt and pepper.
- 25. Drizzle the piri piri oil over the stew.
- 26. Plate the stew and serve it.
