  1. 1. Cut off the root ends and the tough, dark green tops from the leek stalks.
  2. 2. Wash the leek stalks thoroughly under cold running water.
  3. 3. Bring water to a boil in a large pot with salt.
  4. 4. Boil the leek stalks in the boiling water for 10 minutes.
  5. 5. Remove the leek stalks from the pot and let them drain well.
  6. 6. Heat the butter in a pot.
  7. 7. Add the flour and sauté it under stirring until light yellow.
  8. 8. Pour in the milk gradually while stirring constantly.
  9. 9. Let the sauce simmer for about 5 minutes.
  10. 10. Remove the pot from the heat.
  11. 11. Stir the egg yolk into the sauce to thicken it (temper).
  12. 12. Season the sauce with salt, pepper, and nutmeg.
  13. 13. Stir the cheese into the sauce until it has melted.
  14. 14. Preheat the oven to 220 degrees Celsius.
  15. 15. Grease a shallow baking dish with butter.
  16. 16. Wrap three leek stalks with a slice of ham each.
  17. 17. Place the wrapped sticks into the prepared dish.
  18. 18. Pour the sauce over the sticks.
  19. 19. Bake the baking dish in the oven for 15 minutes until golden brown and gratinated.
