🍽️ Gratinated Leek Sticks with Ham

Ingredients
- 12 thin stalks leek
- salt
- 4 slices cooked ham
- 30 g butter
- 30 g flour
- 0.5 l milk
- 1 egg yolk
- pepper
- nutmeg
- 100 g gratin cheese (grated)
- butter (for the dish)
Instructions
- 1. Cut off the root ends and the tough, dark green tops from the leek stalks.
- 2. Wash the leek stalks thoroughly under cold running water.
- 3. Bring water to a boil in a large pot with salt.
- 4. Boil the leek stalks in the boiling water for 10 minutes.
- 5. Remove the leek stalks from the pot and let them drain well.
- 6. Heat the butter in a pot.
- 7. Add the flour and sauté it under stirring until light yellow.
- 8. Pour in the milk gradually while stirring constantly.
- 9. Let the sauce simmer for about 5 minutes.
- 10. Remove the pot from the heat.
- 11. Stir the egg yolk into the sauce to thicken it (temper).
- 12. Season the sauce with salt, pepper, and nutmeg.
- 13. Stir the cheese into the sauce until it has melted.
- 14. Preheat the oven to 220 degrees Celsius.
- 15. Grease a shallow baking dish with butter.
- 16. Wrap three leek stalks with a slice of ham each.
- 17. Place the wrapped sticks into the prepared dish.
- 18. Pour the sauce over the sticks.
- 19. Bake the baking dish in the oven for 15 minutes until golden brown and gratinated.
