🍽️ Savory Pork Pies

Ingredients
- 400 g Spelt whole wheat flour
- 200 g Butter
- Salt
- 2 Eggs
- 3 tbsp Whole wheat breadcrumbs
- 200 g Pork mince
- 200 g Beef mince
- 2 Shallots
- 2 Garlic cloves
- 0.5 tsp White pepper
- 0.5 tsp Rosemary
- 0.25 tsp Allspice
- 1 pinch Nutmeg
- 1 pinch Cinnamon powder
- 1 Egg yolk
Instructions
- 1. Sift the flour into a large bowl.
- 2. Press a well into the center of the flour with your thumb.
- 3. Add the diced butter, salt, one whole egg, and two tablespoons of water into the well.
- 4. Quickly knead the ingredients into a smooth dough.
- 5. Wrap the dough in plastic wrap.
- 6. Chill the dough in the refrigerator for about two hours.
- 7. Crack an egg into a separate bowl.
- 8. Add the breadcrumbs, pork mince, and beef mince to the bowl.
- 9. Peel the shallots and garlic cloves.
- 10. Finely chop the shallots and garlic.
- 11. Add the chopped vegetables to the meat.
- 12. Season the filling with salt, pepper, rosemary, allspice, nutmeg, and cinnamon powder.
- 13. Mix the filling thoroughly by hand.
- 14. Take about two-thirds of the dough.
- 15. Roll out this portion of dough on a floured surface to a thickness of approx. 4 mm.
- 16. Divide the rolled-out dough into 12 equal pieces.
- 17. Grease the indentations of a muffin tin with butter.
- 18. Place one piece of dough into each indentation.
- 19. Press the dough gently against the sides of the mold.
- 20. Distribute the meat mixture evenly over the dough bases.
- 21. Roll out the remaining dough to approx. 4 mm thickness as well.
- 22. Cut out circles from the dough large enough to cover the pies.
- 23. Place the dough circles on top of the filling as lids.
- 24. Press the edges of the lids firmly to seal.
- 25. Separate the egg yolk from the egg white.
- 26. Brush the tops of the pies with the egg yolk.
- 27. Use a round cutter to punch a small hole in the center of each pie.
- 28. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 29. Place the pies in the preheated oven.
- 30. Bake the pies for approx. 45 minutes until golden brown.
- 31. Remove the pies from the oven.
- 32. Let them cool slightly until they are lukewarm.
- 33. Serve the pies warm.
