🍽️ Airy Popovers with Spicy Strawberry Chutney

Ingredients
- 120 g flour
- 1 pinch salt
- 1 egg
- 100 ml milk
- 3 tbsp grated cheddar
- 1 tbsp chive rings
- 3 tbsp vegetable oil
- 500 g strawberries
- 1 red onion
- 10 g ginger
- 1 tsp peppercorns
- 3 allspice berries
- 80 g brown sugar
- 4 tbsp red wine vinegar
- 1 pinch salt
Instructions
- 1. Wash the strawberries thoroughly and remove the green stems.
- 2. Cut the strawberries into small pieces.
- 3. Peel the onion and chop it very finely.
- 4. Peel the ginger and grate it finely.
- 5. Crush the peppercorns and allspice berries in a mortar.
- 6. Add sugar, vinegar, salt, the ground spices, the grated ginger, the onion cubes, and the strawberries to a pot.
- 7. Stir the mixture and bring it to a boil while stirring continuously.
- 8. Let the sauce simmer on low heat for 45 to 60 minutes until it becomes thick.
- 9. Stir the sauce occasionally to prevent it from burning.
- 10. Season the sauce to taste with salt and spices.
- 11. Let the sauce cool down completely.
- 12. Preheat the oven to 220 degrees Celsius fan-assisted.
- 13. Sift the flour into a large bowl.
- 14. Season the flour with salt.
- 15. Crack the egg into the bowl.
- 16. Pour in about 60 milliliters of water.
- 17. Stir in the milk slowly until the batter is smooth and thick.
- 18. Stir the grated cheese and chopped chives into the batter.
- 19. Let the batter rest for a few minutes.
- 20. Brush the cups of 12 popover or muffin tins with oil.
- 21. Place the filled tins in the oven for 5 to 10 minutes until the oil is hot.
- 22. Carefully pour the batter into the hot tins.
- 23. Bake the popovers for another 10 to 15 minutes until golden brown and airy.
