  1. 1. Preheat your deep fryer to 170 degrees Celsius. Alternatively, heat plenty of oil in a large pot. Test the temperature by dipping a wooden stick into the oil: if bubbles rise, it is ready.
  2. 2. Peel the potatoes and cut them into sticks.
  3. 3. Thoroughly dry the potato sticks with a kitchen towel.
  4. 4. Add the potatoes in batches to the hot oil.
  5. 5. Fry the potatoes for about 5 minutes until they are soft but have not yet taken on any color.
  6. 6. Remove the par-cooked potatoes and let them drain.
  7. 7. Rinse the fish fillets and pat them dry with kitchen paper.
  8. 8. Season the fish with salt and pepper.
  9. 9. Drizzle some lemon juice over the fish.
  10. 10. Sift the flour into a bowl.
  11. 11. Stir the beer, egg, and a pinch of salt into the flour.
  12. 12. Cover the bowl with a cloth.
  13. 13. Let the batter rest and swell for 15 minutes.
  14. 14. Stir the batter vigorously after the resting period.
  15. 15. Do not beat the egg whites too stiff.
  16. 16. Gently fold the egg whites into the batter.
  17. 17. Dip one fish fillet individually into the batter.
  18. 18. Turn the fillet in the batter to ensure it is coated all around.
  19. 19. Lift the breaded fillet out and let the excess batter drip off.
  20. 20. Fry the fish fillet in the oil heated to 170 degrees Celsius.
  21. 21. Cook the fish for 6 to 8 minutes until it is golden yellow and crispy.
  22. 22. Remove the finished fish.
  23. 23. Drain the fish well, ideally on kitchen paper.
  24. 24. Add the par-cooked fries back into the hot oil in batches.
  25. 25. Fry the fries for about 2 minutes until they are crispy and golden brown.
  26. 26. Remove the fries and let them drain.
  27. 27. Sprinkle the fries with salt.
  28. 28. Serve the beer-battered fish arranged on top of the fries.
