  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Peel the potatoes completely.
  3. 3. Cut the potatoes into sticks with a diameter of about 1 centimeter.
  4. 4. Rinse the potato sticks with cold water to remove excess starch.
  5. 5. Pat the potatoes completely dry using a kitchen paper towel or a clean cloth.
  6. 6. Mix paprika powder, garlic, salt, and pepper in a small bowl to create a spice blend.
  7. 7. Heat vegetable oil in a pot to approximately 170 degrees Celsius.
  8. 8. Add the potatoes to the hot oil in batches.
  9. 9. Fry the potatoes for about 5 minutes until they are soft but have not yet taken on any color.
  10. 10. Carefully lift the potatoes out of the fat and let them drain.
  11. 11. Increase the oil temperature to approximately 190 degrees Celsius.
  12. 12. Add the potatoes back into the hot oil in batches.
  13. 13. Fry the potatoes for another 2 minutes until they are crispy and golden brown.
  14. 14. Lift the finished fries out of the oil using a slotted spoon.
  15. 15. Let the fries drain well.
  16. 16. Sprinkle the fries with the prepared spice blend.
  17. 17. Serve the fries with tomato salsa as desired.
