  1. 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Peel the potatoes and boil them in salted water for about 25 minutes until tender.
  3. 3. Drain the cooking water and let the potatoes steam dry for a moment.
  4. 4. Press the potatoes through a potato ricer into a bowl.
  5. 5. Mix the mashed potatoes with the butter and the egg yolk until smooth.
  6. 6. Season the mixture with salt, pepper, and a pinch of nutmeg.
  7. 7. Fill the potato mixture into a piping bag fitted with a large star nozzle.
  8. 8. Brush a baking tray with a little oil.
  9. 9. Pipe rosettes of the mixture onto the prepared baking tray.
  10. 10. Brush the rosettes with a little melted butter.
  11. 11. Bake the Pommes Duchesse in the preheated oven for about 10 minutes until golden brown.
  12. 12. Serve the finished Pommes Duchesse garnished with fresh thyme sprigs.
