🍽️ Classic Pommes Duchesse

Ingredients
- 750 g starchy potatoes
- 50 g butter
- 2 egg yolks
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 2 tbsp melted butter
- oil (for the baking sheet)
- thyme (for garnish)
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Peel the potatoes and boil them in salted water for about 25 minutes until tender.
- 3. Drain the cooking water and let the potatoes steam dry for a moment.
- 4. Press the potatoes through a potato ricer into a bowl.
- 5. Mix the mashed potatoes with the butter and the egg yolk until smooth.
- 6. Season the mixture with salt, pepper, and a pinch of nutmeg.
- 7. Fill the potato mixture into a piping bag fitted with a large star nozzle.
- 8. Brush a baking tray with a little oil.
- 9. Pipe rosettes of the mixture onto the prepared baking tray.
- 10. Brush the rosettes with a little melted butter.
- 11. Bake the Pommes Duchesse in the preheated oven for about 10 minutes until golden brown.
- 12. Serve the finished Pommes Duchesse garnished with fresh thyme sprigs.
