  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Line a baking tray with baking paper.
  3. 3. Peel the sweet potatoes.
  4. 4. Cut the sweet potatoes into sticks about 2 centimeters thick.
  5. 5. Put the oil, fennel seeds, and coriander seeds into a large bowl.
  6. 6. Mix the spices with the oil.
  7. 7. Press the peeled garlic into the bowl.
  8. 8. Season the mixture with a little salt and pepper.
  9. 9. Add the sweet potato sticks to the bowl.
  10. 10. Toss the sticks well so they are coated with the seasoning.
  11. 11. Place the sweet potato sticks on the prepared baking tray.
  12. 12. Bake the fries in the oven for about 30 minutes.
  13. 13. Remove the fries from the oven when they are soft.
  14. 14. Rinse the thyme and rosemary under cold water.
  15. 15. Shake the herbs dry.
  16. 16. Strip the leaves from the thyme and the needles from the rosemary stems.
  17. 17. Chop the herbs finely.
  18. 18. Mix the chopped herbs with 1 tablespoon of salt.
  19. 19. Sprinkle the finished sweet potato fries with the herb salt.
  20. 20. Serve the fries immediately.
