  1. 1. Put the tomatoes, oregano, and garlic into a pot.
  2. 2. Bring the mixture to a boil over high heat.
  3. 3. Reduce the heat to low and simmer the sauce for 6 to 8 minutes.
  4. 4. Stir occasionally until the sauce has thickened.
  5. 5. Remove the pot from the heat.
  6. 6. Season the sauce generously to taste.
  7. 7. Set the sauce aside.
  8. 8. Grease a frying pan well with fat.
  9. 9. Place the polenta slices individually into the hot pan.
  10. 10. Fry the slices on high heat for about 6 to 8 minutes.
  11. 11. Turn the slices so they brown on both sides.
  12. 12. Remove the fried polenta slices from the pan.
  13. 13. Heat 1 teaspoon of oil in the same pan.
  14. 14. Fry the pepper strips for 2 minutes.
  15. 15. Add the mushrooms to the pan.
  16. 16. Fry the vegetables for another 4 minutes.
  17. 17. Remove the pan from the heat.
  18. 18. Set the fried vegetables aside.
  19. 19. Spread the prepared tomato sauce over the polenta slices.
  20. 20. Top the pizzas with the fried vegetables.
  21. 21. Serve the pizzas with a crisp salad as a side dish.
